Sampling for food safety - a practical guide 2019

This new Guideline focusses, in particular, on the purpose of testing and sampling and subsequent actions when/if different results are obtained. Examples from food industry are provided.

The guideline discusses common reasons for testing and gives example scenarios for different types of hazards.

The types of sampling plans, their limitations, reasons for sampling and conisiderations associated with practical sampling in different circumstances are discussed.
