The one day course offered by Campden BRI is designed to give delegates an understanding of analytical methods associated with food authenticity testing and the detection of adulterants.

The course is primarily aimed at those who are involved with:
• Adulteration & fraud vulnerability assessment with respect  to raw materials and ingredients
• Analysis of food and who have an interest in learning more about techniques
• Managers, quality control  and technical staff who are requesting authenticity testing to be carried out

course content

• A general overview of  techniques  used to detect adulterants  and determine authenticity in a wide range of food types
• Genomic and proteomic  methods to  detect species
• Use of non-targeted DNA approach such as DNA profiling  and next generation sequencing
• Spectroscopy screening methods (NIR, FT-IR, Raman)
• Chromatography and mass-spectrometry approaches (LC-MS, GC-MS etc)
• Techniques involved with food origin testing
• Rapid methods suitable for in-house testing

The course will involve  use of  case study examples where possible and it is anticipated that some rapid  methods will be demonstrated.  There will also be an opportunity for delegate specific problems to be discussed.
 


Learning Outcomes

On completion of the course delegates will have an understanding of
• What analytical  methods are appropriate for specific authenticity  or adulteration  issues
• The pros and cons of the techniques
• The costs involved with this type of testing.

In addition they will:
• Gain information to enable development of a meaningful  testing plans
• Improve their ability  to interact with analysts in discussions about authenticity testing
