Why are we undertaking this project?

The food industry needs effective control measures for viruses. It’s therefore essential to assess/validate antimicrobial treatments against viruses and select the correct surrogates to validate food control measures.

What are we doing as part of this project?

Investigating the effect of product composition, processing, fresh produce decontamination and storage on the survival and inactivation of various surrogates of human viral pathogens.
