With the rise of veganism and flexitarian diets, the industry is looking for alternatives to egg, dairy and animal-based proteins. In this video, Tiia discusses how her member-funded research project revealed the challenges the industry face when using alternative plant-based ingredients. Tiia also discusses her project’s findings on the willingness of consumers to consume plant-based proteins and the ingredients that the project is focusing on.
