Course Objectives

By the end of the course, delegates will:

  • Apply allergen legislation during inspections.
  • Understand allergen management and integration with foods safety management systems.
  • Assess allergen controls using HACCP principles.
  • Investigate allergen-related incidents effectively.

 Training Course Content

  • Public health impact of allergies - Symptoms, severity, and prevalence
  • Legislation and enforcement - UK/EU requirements and EHO responsibilities
  • Risk assessment and integration with food safety management systems - Reviewing allergen controls during inspections
  • Communication and compliance - Labelling, menus, and verbal information checks
  • Incident investigation - Complaint handling and enforcement protocols

Learning Outcomes

Delegates will be able to:

  • Explain the nature and severity of food allergies and intolerances.
  • Identify the 14 regulated allergens and their sources.
  • Evaluate allergen risk controls during inspections.
  • Verify allergen communication for compliance.
  • Respond to allergen incidents and advise businesses on corrective actions.

Delegates have the option to take a short multiple choice quiz at the end of the course.
